Ingredients -

  • 1 kg butternut pumpkin, peeled and diced
  • 700 mL chicken stock
  • 1 onion, peeled and diced
  • 1/4 cup olive oil
  • 1 potato, peeled and diced
  • 300mL thickened cream

Directions - 

  1. Place oil, and onion into large pot on a medium heat, stirring until onions are translucent
  2. Add in pumpkin and potato, cook stirring for 10 minutes until pumpkin begins to brown
  3. Add in the stock and cook for 10-15 minutes until the pumpkin and potato are very soft
  4. Add in cream and stir then ladle soup into Vitamix in two portions, blend on high for 20 seconds or until the soup is silky smooth
  5. Serve with a little extra cream, and some crusty wholemeal bread
